Abstract

Cellular agriculture offers a transformative approach to protein production by creating biologically derived alternatives to animal-sourced biomaterials. This study focuses on the comprehensive characterization of bovine collagen produced via cellular agriculture. A bovine fibroblast cell line optimized for collagen production was cultured in a custom bioreactor system to produce collagen (≥95% type I), which was extracted, purified, lyophilized, reconstituted at 8 mg/mL, and cast into self-assembling fibrillar hydrogels (Ø8 × 4 mm
