Abstract

To enhance the antibacterial properties of chitosan, this study employed papain as a biocatalyst to graft nisin onto chitosan, yielding two grafted products with grafting ratios of 8.56% (Ni1-Cs) and 14.35% (Ni2-Cs). Structure analyses confirmed the formation of amide bonds. Grafting significantly improved the solubility (92.4%), water absorption (53.4%), and film-forming properties of chitosan, with Ni1-Cs films achieving a tensile strength of 25.2 MPa.
