Gelatin hydrolysates have been extensively used as nutraceutical agents, exhibiting significant biological activity. This study aimed to compare the antioxidant activity and enhancement of collagen expression in human skin fibroblast (HDF-α) cells treated with gelatin hydrolysates from different sources.
